Chestnut honey constitutes one of the main unifloral productions at a national level. Generally, it is found in a liquid state, having a very slow and not always regular crystallization.
Often, chestnut honey is found in a natural mixture with the honeydew produced on the plant itself; when the honeydew is present in a fair quantity, the color of the honey is darker, the smell and aroma are less pungent and the taste less bitter. While, when the presence of honeydew is absent, like the chestnut honey produced by our company, the color is a lighter amber, with an intense aroma similar to the very persistent smell, not excessively sweet with a bitter aftertaste. It is rich in iron, with a low glucose content. Excellent in combination with mature cheeses and in particular with sheep's ricotta.
