Wildflower honey can be produced in periods in which the bees do not find a single species of plant flowering that predominates over the others (as happens with unifloral honey), but collect different varieties of nectar. The result is wildflower honey which can have a different aroma and colour, depending on the harvesting area and the time of year. It crystallizes in a more or less short time.
